Anna Roto Cataldo

Anna Cataldo is a clinical nutrition scientist and registered dietitian committed to advancing preventative health through evidence-based counseling and digital health innovation. With more than a decade of experience in clinical research, medical nutrition therapy, and healthcare strategy, she has built her career at the intersection of science, technology, and patient care.

She has delivered thousands of consults for complex nutrition cases nationwide, developed AI-driven digital health tools, and helped shape reimbursable care models through collaborations with physicians, payers, and regulatory stakeholders. Anna has also contributed to U.S. Dietary Guidelines initiatives and serves on national taskforces with the American Society for Nutrition and the Academy of Nutrition and Dietetics, guiding the integration of AI into nutrition and the future healthcare workforce.

At Enriched, she combines expertise in digital health innovation with clinical nutrition to design scalable, insurance-reimbursable nutrition counseling and programs that integrate seamlessly into care delivery. Her vision is to establish nutrition as a core component of healthcare—improving outcomes, reducing costs, and strengthening community health.

Anna earned her PhD in Rehabilitation Science from Boston University, dual master’s degrees in Biochemical and Molecular Nutrition and Public Health from Tufts University, and completed her clinical dietetic training at Harvard Medical School’s Brigham and Women’s Hospital (now Mass General Brigham). She maintains national credentialing and Massachusetts licensure as a Registered Dietitian Nutritionist.
